Homemade Yeast-Free Pizza

My hubby can't have yeast...so there's goes bread and pizza right?

NO WAY! My goal is to make his diet as "normal" as possible despite not being able to eat yeast, simple sugars, simple carbs and cow dairy.

I found a recipe online for Yeast-free Pizza Dough which works very well. It's definately a thin crust pizza, which he loves. I will post the recipe at the end of this posting.



I had some leftover mexican seasoned chicken from last night so I chopped it up with some fresh herbs and a fresh tomato.



I shredded some cheddar goat cheese.


First make the dough and roll it out onto a pizza pan.

I bake it for 10 minutes in a 400 degree oven.


Then top with marinara (or your favorite sauce), add cheese, toppings and some more cheese.





Bake for another 10-15 minutes.

They LOVE cheese pizza. Often I put 2 or 3 different types of cheese on them, if the little buggers haven't eaten all the cheese in the fridge! Sometimes I add chicken and caremelized onions.





YEAST FREE DOUGH RECIPE

3 cups spelt or whole wheat pastry flour

3 cups bread flour (I use whole wheat bread flour)

1/4 cup cornmeal

2 tsp. baking powder

1 tsp. sea salt

1 1/2 cups water

Combine dry ingredients. Add in the water, mixing with your hands till dough forms a ball.

Press into a non stick cookie sheet or pizza pan, or stone.

Bake crust for 10 minutes @ 400.

Add toppings and bake another 15 minutes.

Note: I have skipped the first baking and just topped the crust and baked right away with good results.
